This week’s post will be short and straightforward, from a content and a meal plan perspective.
I had a very busy weekend supporting an excellent cause, cooking for 100+ staff and visitors. We hosted the annual Iron Chef event, our 9th, with six teams representing our first responders and military units.


For my sins, I was asked to man the kitchen and be responsible for cooking. On my watch, we prepared the usual suspects such as burgers and hotdogs, but I also whipped up a delicious beef and chicken taco fillings – and a kickass Alabama white sauce.
I’ve never made Alabama white sauce, but according to the three chefs judging the BBQ teams, it was an excellent version. As such, I’ll be sharing the recipe soon.
Saturday was full-on with family activities, and Sunday was dedicated to Iron Chef. There was no time to prepare the meal plan or grocery shopping.
The family is suffering from the lack of a meal plan, but thankfully we have some nice meals in the freezer that we will nuke in the microwave.
On the plus side, it is always good to empty out the freezer once a quarter. You don’t want to keep frozen meals too long, and it serves another purpose for me too.
We are buying a quarter cow with a few friends, so I need to free up space in the freezer to store 100lbs of organic meat. Delicious and high quality – only the best for my family.

One day, I might get so organized that I will link the meals below to my recipes. We can only live in hope!
