OMG! Six months flew by. 2022 is already tipping towards fall, although we will have a few nice months with summer sun, outdoor cooking, and hopefully a small vacation.
They say time flies when we have fun, and we have had some fun times already; Florida during spring break, my daughter’s 12th birthday, my 50th, Viking bash, concerts, prom night, graduation event, and graduation party – not to forget the great charity events through Towns 4 Troops.
Something tells me our fun times are not over yet!
Graduation Time
I cannot fathom our bright and beautiful daughter graduating from high school. It feels like she only started middle school, but now she is this intelligent and mature woman ready to take on the world.
The graduation day was scheduled for Friday afternoon, hosting almost 600 seniors and their families. The school estimated 1500 people were in attendance, although it could be slightly higher.
It takes a long time to read out all the names, listen to speeches, and then the paparazzi’s madness suddenly overtook the relatives. But, all in all, it was a great day.
Our daughter wanted a mini-Viking bash party, so I fired up the grills again to prepare burgers, wings, queso, poppers, and finger-licking pork burned ends.
The kids had a blast, and the adults ate and drank a little too much. But, the weather and occasion were perfect for a celebration.
We still have to work on a plan for the next 12 months, whether it is college somewhere in the US or exchange student opportunities in Denmark.








Cooking Time
Summer calls for outdoor cooking. As a result, the summer meal plans tend to focus on the more straightforward yet delicious week dinners that are prepared on the Traeger.
Another aspect of simple meal plans during the summer is that school is out, so I don’t need to cook or prepare lunches for the kids. Instead, they can fend for themselves during the day, using a mix of spreads, boiled eggs, and the odd pizza I might experiment with on the Traeger and my new pizza grill stone.
Chicken and seafood are on the menu this week, which are family favorites.
Fire up the Traeger. Ready your Dutch oven. Go shopping, and let’s start cooking—another Sunday in the Kitchen with music on the magical Demerbox and wonderful aromas filling the room.
