Meal Plan; 21 – 25 June

Another week flew by. Kids are eagerly awaiting the last day of this bizarre school year. Some might argue that it was good that we closed down the entire country (World), but I still firmly believe that our kids have suffered from remote schooling and limited (often no) physical interaction with their friends.

Kids did not get the chance to act out their age or play sports in the fields with their buddies. Instead, we have taught them to social distance, stick to themselves, cover their faces, and indoctrinate them with critical race thinking. This is a messed up school year!

This summer, one kid moves from elementary school to middle school and our oldest moves into her final year in high school. We cannot fathom that she is getting ready for college soon. Soon she’ll be moving out. Our “little” girl is all grown up.

During the month of June, we also get to celebrate Father’s Day twice. Only if you are from certain European countries who celebrate Father’s Day early June, and if you happen to reside in another country that goes all out two weeks later.

I celebrate my dad when Denmark kicked off Father’s Day, and I got celebrated today by my kids in the US. During mass, fathers received a special blessing and were sprayed with holy water too. Fellow parishioners clapped at all the fathers at church, making the day even more special.

Time to talk about food

Because of the winding down of schools, I do not have to worry too much about preparing lunches. I just have to make sure our fridge has some nice lunch options, and they can make it themselves.

I also discovered that we for some reason did not make all the food that was on the planner last week. Probably because some meals lasted two days, and my wife ate out with friends Friday, so the rest of the family had sushi night.

Fire up the Traeger. Ready your Dutch oven. Go shopping, and let’s start cooking—another Sunday in the Kitchen with music on the magical Demerbox and wonderful aromas filling the room.
