The meals planned for the week were tremendous and really helped get the energy to clear 23 inches of snow from our driveway. I ended up spending several hours Monday and Tuesday clearing snow, hoping to avoid a tough job. My plan worked, and moving a few inches each time made it much easier to deal with.
I had my second COVID vaccine Friday, and it kicked my arse on Saturday. My shoulder was sore for almost three days. More to come on my COVID vaccine adventure.
One day, I might get so organized that I will link the meals below to my recipes. We can only live in hope!
The coming week calls for fish, ham hocks, homemade pizza, and I’ll be baking bread for school lunches.

Thursday | Country bread with spread and boiled eggs | Granola bars | Oven-baked salmon with lemon served with grilled asparagus and white rice |
Friday | Egg muffins | Vegetable snacks | Take-out dinner supporting local restaurant |
Saturday | Simple family dinner while I meet up with the boys for beers, grilled seafood and a few shots of whiskey |
