Overnight Viking Berserker Oatmeal

Wake Up! It is time to get ready for another day in paradise. Start the day with a quick and healthy breakfast, and boost your energy levels with an easy oatmeal dish – just like my ancestors made it.

The latter is likely an overstatement, as they did not have almond “diary” products or chia seeds. Nevertheless, I call it the Viking Berserker Oatmeal breakfast. It is essential to kicking off the day with enough energy to siege a village or perhaps handle the battles with tired teenagers.

I’ll admit, there’s nothing new about this breakfast meal. You can find similar recipes on many different sites, so I cannot claim to have invented this. I just gave it a name to fit on my site.

Most of you, especially me, do not want to spend too much time trying to create an egg omelet, dig in the fridge for yogurt and some fruit, or worry about too many carbs when chowing down on a bagel.

In the spirit of meal planning, it is important to prepare food to avoid unnecessary stress. In the mornings, you are more focused on getting ready for work, taking a shower, or attempting to get the kids up and eat breakfast.

This quick recipe does not require much planning and takes literally 5 minutes to make, and your fridge will do the “cooking” for you overnight. You make this dish in the evening. You have to soak chia seeds before you can consume them.

Oatmeal Berserker ingredients

  • 2 cups of rolled oats – I only use Quaker oats
  • 2 cups of Almond milk (we prefer Silk)
  • 1 cup of almond plain yogurt (Silk is the word)
  • 1/4 cup of chia seeds
  • 1/4 cup of maple syrup

Pay extra attention to the below steps – very complicated (LOL)

  1. put all the ingredients into a large enough bowl
  2. Mix the ingredients
  3. Cover the bowl with plastic food wrap
  4. Place the bowl in the fridge overnight

Chia seeds and oats both provide a tremendous amount of healthy nutrition. You’ll be surprised how much this meal fills you up, and it’ll give you energy for many hours. It is much healthier than a simple bowl of cornflakes or other sugar-loaded cereals.

I know many people who use chia seeds when trying to control their food intake. The seeds, when soaked, fill you up. Some friends even put them a tablespoon of seeds in a glass of water, with a few slices of lemon, and drink that instead of breakfast.
