Mother’s Day pancakes

Well, in theory, you could use this recipe for any occasion, but I just happened to make it for my wife, for Mother’s Day this year.  It was a nice way of waking her up, with a nice sweet n savory breakfast.

I obviously also brewed some excellent decaf coffee from my favorite coffee supplier, Black Rifle Coffee Company.  Excellent roasted decaf with sweet pancakes.  Perfect pair.

What do I love about this recipe?

Well, you can literally throw all ingredients into one large bowl, blend it for a few minutes and let it rest for at least 30 minutes.

There are no complicated or obscure ingredients in the batter.  Most things should already be in your fridge and kitchen cupboards.

You can make this batter in secret too, if you go old-school with a hand whisk.

Ok, ready?

Throw all these ingredients into a medium-sized bowl, and mix it well for 3-5 minutes.

  • 2 cups of almond milk, or your preferred milk
  • 4 large eggs
  • 3 tablespoons of butter – melted in the microwave
  • 1 1ablespoon of white sugar
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of regular flour

Please note – I do not add salt to any of my recipes!

Once you have mixed it very well, with few or no small lumps, put it aside for at least 30-45 minutes.  This will just let the batter get a little firmer and more flavors.

See, you just scored points on your wife’s board, and can get away with an extra beer at your next BBQ, or just to relax on the deck while enjoying a clear blue sky with no airplanes or noise cars.crepes.jpg
