Parmesan Cauliflower Snacks & German Red Relish

We have all been there, and we are all still doing it.

You go to the supermarket with no clear food plan and buy all kinds of vegetables and meats. Deep inside you firmly believe that you have memorized various recipes and can easily prepare delicious dishes with what you’ve bought.

It makes you feel very accomplished and healthy when half the shopping cart is vegetables. The look you get from fellow shoppers adds to your confidence.

You quickly realize, a few days later, that you have completely miscalculated or your busy work week prevents you from making these delicious meals.

Although I have been very good at preparing food plans and only buy what we need, I still managed to have a full red cabbage and a cauliflower – and no idea what to do with these.

At this point, they were showing signs of older age. Probably because they’ve been lying in solitary confinement in the vegetable section of the fridge.

To avoid throwing out food, I wanted to create and extend the life of these vegetables, which is a lot simpler than you might think. It will not be main dishes, but more like tasty snack and side dishes.

Red Cabbage Relish Magic

  • 1/2 red cabbage
  • 1/4 cup of balsamic vinegar
  • 2 tablespoons of sugar
  • 2 tablespoons of butter
  • 1 tablespoon of granulated garlic
  • 1 teaspoon of dried basil

Let’s make a nice simple German relish, which is excellent with most meat dishes and you can store it in the fridge for another week at least. It takes about 40 minutes start to finish.

  1. remove the dead and outer leaves from the cabbage
  2. Cut the cabbage head into 4 pieces
  3. Finely slice the cabbage, as thin as possible
  4. Heat up the butter on a large pan
  5. When ready, toss the cabbage into the pan, and coat/turn it
  6. Let it cook for about 5 minutes
  7. Add the vinegar, sugar, garlic and basil
  8. Mix it around
  9. Lower the heat to low-medium
  10. Simmer the cabbage for 25 minutes, stirring every 4-5 minutes

Voila! You have made a simple red cabbage relish. The Germans might be proud of you!

Parmesan Cauliflower Snacks

  • 1 full cauliflower head
  • 1/2 cup of Parmesan
  • 1 teaspoon of paprika
  • 1 tablespoon of granulated garlic
  • 1/4 teaspoon of Chipotle pepper
  • 2 tablespoons of olive oil

The cauliflower snack can be used as a side dish or just to nipple on. It takes roughly 35 minutes to make these little snacks.

  1. Preheat your oven to 450F
  2. Remove the leaves from the cauliflower head
  3. Cut the cauliflower into small florets
  4. Place all the florets in a medium sized bowl
  5. sprinkle the florets with olive oil, paprika, garlic and Chipotle pepper
  6. Mix it well so all the florets have some coating of the spices
  7. Bake the florets for 22-25 minutes
  8. Take of the florets and sprinkle the cauliflower with Parmesan
  9. Place it back in the oven for 5-7 minutes

Voila! Another excellent side dish has been created, ready for consumption.

See, it is not hard to make quick little side dishes, and you avoided discarding vegetables.
