My BBQ Basting Sauce

Basting or mop sauce is your secret weapon when you are trying to impress your family and friends.  It is not to be confused with BBQ sauces which are much thicker, and generally applied after the grilling and when the meat is served.

A good mop sauce gives your meats the extra little kick, during the grilling process.  It keeps the meat moist and should be applied every 45-60 minutes, or when your meat looks dry.

It is a very thin consistency and the most common ingredients are vinegar, beer, wine, Worcestershire sauce or fruit juice.

Each pitmaster has their own variation and flavors.  So, I created my own which I’m happily sharing here:

  • 1 can of beer, preferably a larger, but a Guinness might be good too
  • 1 cup of apple cider vinegar
  • 1/4 cup of Worcestershire sauce
  • 1/2 cup of coffee (I use decaf from Black Rifle Coffee Company)

Mix all the ingredients in a bowl.

When ready to use it, you can brush/mop it or use a spray bottle too.  Your choice!

Note – if you use ingredients like crushed garlic or dry herbs, then you should not use a spray bottle.  It will simply block it.
