Dunkin’ Breads – a perfect partner for chowders and soups

It is soup and chowder season. 2020 has been awful, and these days we are getting hit by a Nor’ Easter storm worthy of 2020. They predict 12-24 inches of snow, in less than 12 hours, in our area. Thankfully my ATV (side-by-side) is warmed up, plow attached, and eager to go.

Eating a nice warm soup or chowder is excellent during the colder season, but sometimes it needs a little extra on the side. Sure, you can whip up a little garden salad or buy some fancy croutons, but I’m a sucker for nice fluffy bread.

During my Indian Jones searches, I came across a nice looking bread bun recipe a few days ago, to make on the Traeger, of course. We love having a nice soft bread to dip into the warm food.

As usual, I modified the recipe slightly, mainly because the original dish was a little off with some of the measurements, and I try to avoid salt.

This recipe calls for a cast iron pan, about a 12″ pan. I used my cornbread cast iron pan. It shapes the bread into handy little bread triangles.

Before you start mixing the ingredients and preparing the dough, turn your Traeger on, or any other pellet grill imitation. Set the temperature to 400F.

The prep time for these rolls is less than 10 minutes, assuming you have the ingredients ready. This is the perfect time for the grill to be nice and warm.

Ingredients

  • 1 1/4 cup of warm water (110°F to 115°F)
  • 1/3 cup of vegetable or olive oil
  • 2 Tablespoon active dry yeast
  • 1/4 Cup sugar
  • 1 egg
  • 3 1/2 Cup all-purpose flour

Mixing the actual ingredients is super simple. The longest part is waiting for the yeast to activate.

  1. Add the warm water to your mixing bowl
  2. Add the yeast and let it activate. It usually takes 5-10 minutes
  3. When it is foamy, add the oil, sugar, egg, and two cups of flour
  4. Gently mix the ingredients, and slowly add more flour
  5. Once the dough has a nice consistency and a little sticky, you are done
  6. Grease your cast iron pan with Pam spray
  7. Depending on the cast iron pan you have, either;
    1. Cornbread pan – divide the dough into 8 pieces and place each piece in the triangles
    2. Regular pan – divide the dough into 8 balls, and place them closely
  8. You could brush them with a little melted butter and sprinkle them with some garlic granulates
  9. Place the bread in the Traeger, and bake for 25 minutes

If you greased the pan well, then you should be able to slide the bread out easily. Tap the bottom of the bread. They should have a hollow sound.

Let the bread cool a little, just a few minutes (3-5 mins), and then serve to your hungry mob.
